Sosa maltodextrin is a maltodextrin powder derived from corn. The texture agent contains molecules of maltose, glucose, maltotriose and some polysaccharides. It is used as a thickener, emulsifier, gives confectionery products sweetness, stops crystallization, allows to balance the texture of confectionery dishes and products, retains and enhances their flavor. Sosa maltodextrin is highly soluble in water. It is used to make thick, pasty textures, in particular: sorbets, ice cream, drinks, caramel, soups. In addition, it is used in bakery production, production of semi-finished products, baby food, etc. It can also be used as a gelling agent. Maltodextrin is a common texturizer in molecular gastronomy.
