Sosa gluconolactate is a mixture of calcium lactate and calcium gluconate in the form of a fine white crystalline powder (sometimes with a cream tint) without a specific smell and taste. The main purpose of use is a synergist of antioxidants and acidity regulation. Sosa gluconolactate dissolves in water with hydrolysis, forming acidic solutions, slightly soluble in alcohol, also soluble in ether and chloroform. It is a safe food supplement. Allows to activate the work of antioxidants. Basic properties of gluconolactate: regulates the acidity level of products, serves as a thickener, stabilizes the consistency of smoked and raw-smoked meat products, in combination with sodium is used as a leavening agent, can replace ordinary yeast due to slow gas formation, improves the appearance of products and shortens heat treatment time. It is used for the production of protein creams, desserts, jam, jams, cookies, fruit juices, bakery products and pizza.
