Properties: Emulsifier.
Directions for use: It works very well in the ganaches, incorporating the watery part and applying túrmix.
Application: In ganaches where there is already cream, milk or white chocolates is sufficient with 0.5% In ganaches where the liquid part is water or alcohol and dark chocolate, preferably dosing up to 2% to have enough protein.
Remarks: Do not boil or reach high temperatures to avoid denaturation.
Elaborations: Ganaches. , creamy, etc. where the cream or lactic acid is replaced by water to make the first emulsion.
