Almond & Hazelnut Praline (DGF)
Ingredients: Sugar, Almond 25%, Hazelnut 25%, Stabilizer - Sorbitol.
Good balance, sustained roasting and caramelization for a clean taste in mousses and interiors, in pastry and chocolate.
Applications: Petits fours, praline interiors, desserts, paris-brest, flavored sauces, ice creams and mousses.
How to: Stir the pralines and the hazelnut paste well before using them, then store them preferably in a cool place to slow down the settling of the hazelnut oil.
