Erythritol – sugar substitute (Standard)
Erythritol or Erithrol is a polyhydric sugar alcohol used as a sugar substitute. It is obtained from natural vegetable sugar, which is mixed with water, fermented, crystallized and then dried thoroughly. The finished product is in the form of white crystals or powder that looks like regular sugar. The sweetness of erythritol is about 70-80% of regular sugar, but the product has zero calories. The absence of calories is achieved due to the small size of the molecules, which do not go through the process of splitting and are excreted from the body in almost the same form in which they entered. Since erythritol is not broken down or absorbed in the body, it does not affect either glucose or insulin levels in the blood. This suggests that erythritol is a good alternative to regular sugar for overweight or diabetic people.
Recommended use: used as table sugar, in baked goods, for making desserts, can be added to tea, coffee, etc.
